Touchdown Taco Dip
(Adapted from Pampered Chef)

Ingredients
1 (16oz.) can whole or refried black beans
1 (8oz.) pkg. Cream cheese, softened
2 cloves garlic
1 (1.25oz.) pkg. Taco seasoning
1 tomato, chopped
1/4c. Onion chopped
2T. Fresh cilantro, chopped
1/4c. Black olives, chopped
1/2c. Shredded cheddar cheese 
Tortilla chips

Directions
Preheat oven to 375°. Spread beans on bottom of medium casserole. Combine creamcheese, garlic, and taco seasoning - spread this mixture over beans. Combine tomato onion, cilantro, and olives - spread on top of cheese mixture. Top with cheddar cheese. Bake 25 minutes. Serve with tortilla chips and sour cream. Serves 12

Hot ‘N Honey Chicken Wings

Ingredients
3lbs. Chicken wings
3/4c. Pace picante sauce
2/3c. Honey
1/3c. Soy sauce
1/4c. Dijon style mustard
3T. Vegetable oil
2T. Fresh ginger, grated
½ tsp. Orange zest
Additional picante sauce

Directions
Cut off and discard wing tips; cut each wing in half at joint. Place in a 15x10 inch baking dish. Combine ¾ cup picante sauce, honey, soy sauce, mustard, oil, ginger and orange zest in a small bowl. Mix well, pour over chicken wings. Cover and refrigerate at least 6 hours or overnight. Preheat oven to 400°. Place chicken wings and sauce in a single layer on a foil-lined 15x10 inch jelly roll pan. Bake 40-45 minutes or until brown. Serve warm with additional picante sauce. Garnish as desired. Makes 34 appetizers

Saltine Chocolate Toffee

Ingredients
1 bag saltine crackers (¼ of a box)
1c. Granulated sugar
1c. Butter
1tsp. Vanilla
1 (12oz) bag semi-sweet chocolate chips
1/2c. Pecans or walnuts, finely chopped

Directions
Line a 15 x 10 inch cookie sheet with foil. Lay crackers side by side. Melt butter and sugar on stove. Bring to a boil and stir constantly for 3 minutes. Take off stove and add vanilla. Stir well. Pour over crackers and spread evenly. Bake at 375° for 7-8 minutes. Take out and sprinkle with chocolate chips. Spread evenly when they melt. Sprinkle with nuts. Put in freezer overnight. Turn upside down, peel the foil off, and break apart. Store in refrigerator or freezer if making ahead.
